I always like to celebrate goofy holidays…especially when it involves something delicious.
Today is National Peanut Butter Day.
Here’s a great way to take part in the day: Peanut butter cupcakes with chocolate icing!
This recipe posted above is vegan. Many readers may not know that I was a vegetarian for about 15 years and have been vegan for more than two years, and it’s one of the best decisions I ever made. A lot easier than you’d imagine, too.
If you are looking for more ways to celebrate the day, there are a handful of neat recipes here. And if you are looking for an easy way to stick to New Year’s Resolutions of being a little healthier, here’s a vegan cheat sheet so you can create the same delicious treats, with less fat and cholesterol. The substitutions are easy, and usually involve something you already have in your cupboards. (ie, Use applesauce in cake, instead of eggs, or cornstarch and water in cookies. You can even make buttermilk by adding lemon juice to soy, almond or rice milk.)
